I’m a big fan of recipes that don’t make life harder. Most days are busy enough. Between work, family, and everything else on your plate, the last thing you need is a complicated dessert with a long ingredient list.
That’s exactly why I love this one.
It’s simple, it comes together quickly, and it still feels like something special. The kind of treat you can put out when people stop by, bring to a get-together, or just make for yourself at the end of a long day. Because let’s be honest, sometimes you don’t need a reason. You just want something sweet with your coffee and a few quiet minutes to enjoy it.
This is also one of those recipes you can make your own. Keep it simple, or dress it up a little if you’re hosting. Either way, it works. And it always gets eaten. Some of my favorite moments aren’t big, planned events. They’re the small ones. Sitting at the table a little longer. Catching up with a friend. Having something good to share without a lot of effort.
That’s what this recipe is for.
Simple, good, and worth making again.

Ingredients
1 cup of Peanut Butter (melted)
1 - ½ bag of Milk Chocolate Chips (melted)
2 whole Stroopwafels (cut into pieces)
1 banana (sliced into pieces)
What you will need:
1 six-count muffin/cupcake pan
12 cupcake liners
2 small, cereal-sized bowls for warming the peanut butter and chocolate
How to:

Take the cupcake liners and double-line each cupcake section of the pan.

Warm up the peanut butter in a small bowl in the microwave for no longer than 30 seconds or until warm.

Warm up the chocolate chips in a second small bowl for 30 seconds or until they are melted. Be sure not to overheat. Stir until all the chocolate chips melt.

Slice your banana into pieces, about a half-inch thick. Place one into each cupcake liner, then cover each with two small spoonfuls of peanut butter, or until each banana is covered.

Next, take your melted chocolate and spoon 2 small spoonfuls over each banana covered in peanut butter, until the chocolate covers the peanut butter fully.

Take your Stroopwafel pieces and place 3-4 small pieces onto the top of each cup.

Finally, take your Stroopwafel cups and place them in the freezer. Leave them for at least 1 hour. This will allow each cup to be completely solid. Serve and enjoy!
